Cooking Fiend

I have been in the mood to cook lately. Most of you do not know NB, but he seems to rather enjoy having a woman in the kitchen cooking for him. Odd, that men like that. I can’t imagine where they get this.

(No worries, he has a garage door to affix and a thermostat I’m going to con him into installing at my place. I seem to have a traditional fetish for men doing man work for me.)

So, I’m sharing the things I’ve made recently with you. Because I love you.

Here are things I’ve found delicious:

Spiced Beef Corn Bread Cobbler
I made this last week or so. I cobblered nothing on this. I just spread out the cornbread on top, cobblering seemed to leave parts unnecessarily uncovered and I like my starches. And I doubt I stayed true to the spice measurements, I usually just eyeball, taste, adjust, and get it to where I want things.

Sweet Potato Fries with Oh My Darlin’ Clementine Salmon.
These sweet potato fries are becoming a staple around here. They are usually soft, not crisp and fry-like, but oh my lands delicious. I never put parsley on there. Because I apparently never have any.

The salmon is pretty basic, but I had some clementines leftover so I made this easy salsa. So good. The salmon doesn’t need it, but it’s delicious with it.

Shrimp Pho with Lemongrass, Chili, and Ginger
This is absolutely delicious. I used rice noodles (to change it from just a broth to a pho) but I forget, rice noodles are tricky with a broth (do you use a fork, spoon, chopsticks…all three?) and I think I’ll use rice next time. I didn’t have lemongrass, so I used the zest of a few lemons. I also didn’t want to buy a serrano chili, so used chili powder. I love garlic but I pretty much left it out. Sacrilege, I know. Delicious, delicious sacrilege.

This is tonight’s dinner:
Pot Roast and Mashed Potatoes by none other than the PIONEER WOMAN!
You must trust this woman. I made her Lasagna and even though I thought she was crazy for including anything by Jimmy Dean in it, I made it anyway. Because I totally dig crazy women. And you know what? She was not joking when she called it the best lasagna ever. It was.

As for this Pot Roast, it’s easy, it looked flavorful and delicious and kind of follows what I do normally but without a crock pot. I am okay with the crock pot, but it leaves a lot to be desired sometimes.

These mashed potatoes sound like sin on wheels. I am ALL ABOUT trying cream cheese in my mashed potatoes. And I am all about sin in potato form.

    Okay. I have to go eat lunch now (an hour and fifteen minutes early; thanks). ;)

    I am going to cornbread-cobbler the next batch of potassium hash I make. I think that recipe has been crying out for cornbread cobbling this whole time, and I just never heard its pleas until now.

    I also salivate at the thought of clementine salsa on salmon. mmmmmmmmmmmmm
